Kidco Kitchen’s Top 5 Summer Dishes!

 

This July, Kidco Kitchen has launched its fabulous Summer Menu! We take pride in serving your little ones the highest quality ingredients and food, which also tastes delicious! By introducing a variety of flavours and textures, from all over the world, your children are developing a palate to help prepare them for a lifetime of healthy eating. Here are some of Kidco Kitchen's favourite summer dishes, which are sure to put a smile on your little ones faces!

 

1)      Pulled Beef Sliders

Why you’ll love it

This yummy dish is brand new to the Kidco menu! Our sliders are made from 100% Canadian beef that is thinly sliced and slow cooked so that they are perfectly tender for your little ones to eat. By serving red meat at least once a week it ensures that your children are meeting their iron and B vitamin levels, essential to their growth!

Why your kids will love it

This tender Pulled Beef Sandwich is drizzled with our delicious homemade Kidco Kitchen BBQ sauce, and served on a fresh whole wheat bun with steamed broccoli! Kids love being able to go cutlery free with this awesome sandwich!

Recipe

1) Cook and thinly slice a roast beef.

2) Drizzle with Kidco Kitchen Homemade BBQ Sauce.

Kidco Kitchen BBQ Sauce

*Makes 6 portions

 What you need:

-       ¼ cup diced onions

-       1 bay leaf

-        ¼ cup brown sugar

-       1/3 cup ketchup

-       pinch paprika

-       1 tbsp. vinegar

-       1 tsp oil

What to do:

  1. Be sure to wash your hands before you begin.
  2. Sweat onion in oil, add bay leaf for 2 minutes. Add ketchup and vinegar and bring to a boil. Add brown sugar, paprika, salt and pepper then simmer for 10 minutes.

 

 

2)      Crazy Curry Chicken

Why you’ll love it

Our Crazy Curry Chicken is a delicious kid friendly version of the popular Indian dish, butter chicken!  This is a great starter dish for your little ones to begin expanding their palate. By using spices such as turmeric, garam masala and curry powder we are opening your child’s taste buds to a multitude of new cultural dishes! Exposing the children to a variety of different flavours, they will be more open to trying new foods in the future.

This dish is PACKED with flavour and its smooth creamy texture is easy for your little ones to digest. The new exciting flavours, combined with the bold colour of this dish make kids eager to scoop some on their plate! We serve our Crazy Curry Chicken with Terrific Thai Noodles and fresh Broccoli.

 

Recipe

Kidco Kitchen Crazy Curry Chicken

*Makes 6 portions

What you need:

-       ½ cup plain yogurt

-       ¼ tsp curry powder

-       ¼ tsp paprika

-       ¼ tsp turmeric

-       1/8 tsp mild chili powder

-       ¼ tsp garam masala

-       1 clove minced garlic

-       3 cup cooked diced chicken

-       ½ tbsp. vegetable oil

-       1 cup diced onions

-       1 cup diced tomatoes

-       1 tbsp. unsalted butter

-       2 tbsp. cream

-       1 bay leaf

What to do:

  1. Make sure to wash your hands before you begin.
  2. Combine dry spices and yogurt together (curry powder, paprika, turmeric, chili powder, garam masala, garlic).
  3. Use this mixture to marinade the cooked chicken in the refrigerator overnight.
  4. Heat oil in a large skillet and cook onions until translucent. Add diced tomatoes, butter, cream and chicken mixture.
  5. Reduce to medium heat and cook until sauce has thickened.
  6. Serve and enjoy!

 

 

3)      Zesty Lemon Fish Fingers

Why you’ll love it

Here at Kidco Kitchen we believe fish should be a weekly staple in your child’s diet! Fish is one of the only natural sources of omega-3 fatty acids, proven to aid in healthy brain development, vision, concentration and more! Numerous studies have shown children who eat fish at least once a week are at a lower risk of ADHD and other brain development issues.

Why your kids will love it

Our zesty lemon fish fingers are a favourite among our kids! This mild lemon glaze has just enough of a kick to keep your little one interested, without being to sour. We serve our Zesty Lemon Fish with Organic Quinoa and a mix of Summer Veggies!

Recipe

Kidco Kitchen Zesty Lemon Fish Fingers

*Makes 6 portions

What you need:

-       6 4oz tilapia filets

-       1 tsp lemon pepper

-       ½ tbsp. lemon juice

What to do:

  1. Be sure to wash your hands before you begin.
  2. Preheat oven to 400F.
  3. Place tilapia in a single layer in a parchment lined shallow baking pan.
  4. Brush the lemon pepper and lemon juice on the tilapia.
  5. Bake for approx. 15-20 minutes, or until tilapia is cooked through.

 

 

4)      Monkey Pudding

Why you’ll love it

Our monkey pudding is one of our most popular afternoon snacks at Kidco Kitchens. Our Monkey Pudding is made from plain yogurt which is 100% Canadian dairy and gelatin free. Combined with this is unsweetened apple sauce and fresh bananas. By using plain yogurt and unsweetened applesauce your child is only receiving natural sugars from the bananas and apples.  An added bonus, this is SUPER easy to make at home!

Why your kids will love it

We always have to send second and third helpings on monkey pudding day! This snack is a perfect mix of sweet from the fresh banana’s and tart from our plain yogurt and unsweetened apple sauce. Plus, your little monkeys just love the name!


Recipe

Kidco Kitchen Monkey Pudding

*Makes 6 portions

What you need:

-       1 ½ cup mashed bananas

-       3 1/2 cup unsweetened applesauce

-       1 1/2 cup plain yogurt

What to do:

  1. Be sure to wash your hands before you begin.
  2. Peel bananas and mash in bowls.
  3. Mix in applesauce and yogurt.

 

 

5)      Fresh Summer Fruit

Why you’ll love it

This summer we have introduced some great summer fruits onto our menu including: plums, watermelon, pears, cantaloupe, apples, grapes, peaches, blueberries and pineapple!  By providing such a variety of fruits we are ensuring that your little ones are receiving all of their vitamins, minerals, antioxidants and more! In addition to packing a nutritional punch many of our summer fruits are also great ways to keep your children hydrated on a hot summer day.

Why your kids will love it

Kids love the variety and fun colours of our summer fruits, from the deep purple plum to the bright yellow pineapple. In addition to the colours, children love the natural sweetness of our fresh fruits.
