Vibrant Vegetarian Meals

Veggie & Barley Stew

Serves: 6 portions

Recipe Time: 45 - 60 Minutes

What you need

  • 1 Tbsp Olive Oil
  • 1 Cup Diced Onion
  • 1 Cup Diced Carrots
  • 1 Cup Diced Celery
  • 1 tsp Minced Garlic
  • 4 Cup Veggie Stock
  • 1 Cup Pearl Barley
  • 1 Cup Diced Potatoes
  • 1 tsp Thyme
  • 1 tsp Parsley
  • 2 ½ Cup Veggie Ground Round
  • 1 Cup Peas

What you do

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook 5–6 min until softened. Add garlic and cook 1 more minute.
  2. Stir in vegetable stock, barley, potatoes, thyme, and parsley. Bring to a boil.
  3. Reduce heat and simmer, partially covered, for 30–35 min until barley and vegetables are tender.
  4. Stir in veggie ground round and peas; cook an additional 5–10 min until heated through.
  5. Serve warm.
