Vibrant Vegetarian Meals

Cheeky Cacciatore Fillet

What you need

  • 2 lbs Diced Tofu
  • 1/2 Cup Onion, Thinly Sliced
  • 1 Tbsp Veggie Oil
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Tomato Paste
  • 1 Bay Leaf
  • 1 Cup Diced Tomato
  • 2 Cups Veggie Stock

What you do

  1. Make sure to wash your hands before you begin.
  2. Heat oil in a large pot and cook onions and garlic until translucent. Add all remaining ingredients and this mixture to a bowl.
  3. Cover pot and simmer on low heat until all stock is absorbed. About 30 minutes.
