Have Fun with those Holiday Leftovers!

I hope everyone has been enjoying the wonderful holiday season. Whatever occasion you are celebrating, I’m sure we all have something in common, lots of delicious leftovers! I’ve attached some great soup recipes you can make using your holiday leftovers.

 

Turkey Soup

This soup is the perfect way to use up some of that leftover holiday turkey.

What you need:

  • 6 cups fat-free, low-sodium chicken broth
  • 1/2 cup pasta noodles or rice
  • 6 carrots
  • 6 celery stalks
  • ½ cup of leeks
  • 1 cup cooked white-meat turkey
  • ground black pepper

What to do:

Bring the broth to a boil in a large saucepan, and then reduce to a simmer. Add pasta or rice, followed by diced carrots, sliced celery and leeks. Simmer for 20 minutes or until rice is cooked and vegetables are tender. Add the cooked turkey and simmer for just 5 minutes longer. Grab yourself a bowl and enjoy! This makes about 6 adult servings.

 

Split Pea Soup

This soup is the perfect way to use up some of that leftover holiday ham.

What you need:

  • 1/4 cup olive oil
  • 2 large onions
  • 2 celery stalks
  • 2 carrots
  • 1-pound bag of rinsed split peas
  • 1 1/2 pound smoked ham hock
  • 2 quarts chicken stock
  • Salt and freshly ground black pepper

What to do:

In a large pan, sauté your finely diced onions, celery and carrots over medium-high heat. Add the peas and your ham hock to the mix. Cover with stock by a couple inches. Bring it all to a simmer and cook for about 1 hour until soup is thick and peas have almost disintegrated. Season how you like it with some salt and pepper. Remove the ham hock and let it cool. Pull meat from bone and dice it. Finally, put your pea soup in a bowl and garnish it with pepper and the diced ham. This makes about 5 adult servings.
