How Flaxseed Can Supercharge Children’s Nutrition: Unlocking the Secrets of this Superfood

Flaxseed has gained quite a lot of attention as a nutritional superfood in the last few years. In this blog, we explore the countless benefits of flaxseed and discover why it deserves a place in your kitchen. At Kids & Company, we use flaxseed in many of our Kidco Kitchen baked good recipes!

So what is flaxseed? 

Flaxseed, also known as "Fiber Friends," are cute, little seeds that pack a big punch when it comes to health! Think of them as the tiny superheroes of the seed world, working their magic to keep your child healthy and happy.

At Kids & Company, we believe in building healthy bodies and healthy minds. As a part of our initiatives we have created an environment to reduce allergen exposure by switching eggs to flax eggs, so that children can also get the benefits of flax. 

 

Flax Recipe: Stunning Strawberry Muffin

Serves: 16 portions

Recipe Time: 50 Minutes

What you need: 

  • 1 ½ Cup Whole Wheat Flour
  • 2 Tbsp Flax Flour
  • 6 Tbsp Water
  • ½ Tsp Baking Soda
  • 2 Tsp Cinnamon
  • ¼ Tsp Sea Salt
  • 1 1/2 Cup Strawberries
  • 3/4 Cup Sugar
  • 1/4 Cup Veggie Oil
  • ¼ Tsp Vanilla Extract

What to do:

  1. Make sure to wash your hands before you begin.
  2. Preheat oven to 350F.
  3. Mix the flax flour and water in a small bowl, let it sit for at least 15 min.
  4. Puree 1 cup of strawberries and chop the remaining strawberries and set aside.
  5. In a large bowl, mix the flour, sugar baking soda, cinnamon and sea salt.
  6. In a separate bowl, mix the strawberry puree, veggie oil, flax mixture and vanilla.
  7. Stir the oil mixture into the flour mixture just until moist.
  8. Fold in the chopped strawberries.
  9. Spoon mixture into a lined muffin tin.
  10. Bake for 25-30 minutes or until a toothpick inserted into the centre of the loaf comes out clean.
  11. Cool pan for 10 minutes.
