Fab Fish Tacos

Ask anyone, I absolutely love the Fab Fish Tacos on the Kidco Kitchen menu. I knew this menu item was going to be a hit right from the get-go. This traditional Mexican dish is sure to get your family’s tummies grumbling. You can even mix up the ingredients for added variety! While we use brown rice, beans, fish fillets and cheese, your tacos can be made with a variety of fillings. Try including beef, chicken, tofu or vegetables. Kidco Kitchen Fab Fish Tacos

What you need:

-   ¾ cup Brown Rice

-   2 tsp. Canola Oil

-   1 ½ cup Water

-   1 cup Fish Fillets

-   6-8 Whole Wheat 7” Tortillas

-   ¼ cup Pinto Beans

-   ¼ cup Medium Cheddar Cheese

-   1 Garlic Clove

 

What to do:

1. Wash hands and preheat oven to 350⁰F.

2. Bring water to a boil and add rice. Cover tightly, cook on low heat until rice is tender and water is absorbed, about 40-50 minutes. Remove from heat and let stand, covered, about 5 minutes. Fluff with fork.

3.  Place fish on a greased baking sheet and bake for about 15-25 minutes, until fillet flakes easily with a fork. Flake fillet into bite size pieces.

4. Lay tortilla flat. Place cooked rice with beans on one half of the tortilla.

5. Top rice with beans, fish, cheese and salsa.

6. Serve and enjoy!
