Launching the Kidco Kitchen Menu!

I cannot believe that the moment has arrived! I am out West this week at the Vancouver, Richmond and North Vancouver sites launching the new Kidco Kitchen menu! At the Kidco Kitchen we believe in “building healthy bodies and minds.” I have been creating this new menu since the summer, working closely with our dietitian, ensuring that our food is nothing but healthy for your little ones. The entire new Kidco Kitchen menu is made from scratch.

 

On Monday, I landed in Vancouver and it’s been go, go, go ever since. I made sure to pack my chef whites as I’ve been working directly with Shelly and Jenny, our Vancouver chefs, on cooking up this brand new menu.  I’ll make sure to take some delicious pictures. I’ll be available at the Richmond, Vancouver and North Vancouver sites this week for a question & answer session for our parents. This week in Vancouver, we will be serving many delicious foods like Tofu Mac & Cheese, a Rootin’ Tootin’ Roast Beef Sandwich and one of my favourites, Butter Chicken! Yum! Want to try making some of our new menu at home with your children? Try this recipe!

 

 

Kidco Kitchen – Butter Chicken

 

**Serves a family of 4

 

Step 1 - What you need:

 

1/2 teaspoon Canola Oil

2 - 4oz. Chicken Breast

1/2 cup Plain Yogurt

1/2 of a Garlic Clove

3/4 teaspoon of Spice Garam Masala

3/4 teaspoon of Curry Red Paste

1/4 teaspoon Paprika

 

What to do:

 

  1. Strain cup of yogurt. Discard liquid.
  2. Marinade diced chicken in garlic, garam masala, curry paste and paprika.
  3. Roast chicken in oven at 350F until well-cooked, approximately 45 minutes.
  4. Peel and chop onion.

 

 

Step 2 - What you need:

 

1/2 teaspoon Canola Oil

1/4 of a Cooking Onion

3/4 teaspoon of Spice Garam Masala

1/4 teaspoon Paprika

1/4 teaspoon of Curry Red Paste

6 oz. of Diced Tomatoes

2 tablespoons of 10% Cream

1/2 tablespoons of Trans Fat Free Margarine

 

What to do:

 

  1. Heat oil in large skillet, and cook onion. Add garam masala, paprika, curry paste, diced tomatoes, margarine and cream.
  1. Bring mixture to a boil and then reduce to medium heat until the sauce has thickened.
  2. Pour over diced chicken and mix.
