Popular Fruit Popsicles

I hope everyone had a great long weekend. Victoria Day weekend marks the beginning of the summer season for my family and me. The summer season brings with it lots of sun, BBQs, long weekends, and celebrations!

Want a colourful, delicious and healthy cold snack to make for your children this summer? Try making a fruit popsicle with your little ones on any of this season’s hot summer days. You can use real fruits with a fruit juice, fruit puree or your favourite yogurt depending on what you prefer. Try a variety of different fruits throughout the summer. I found the recipe below on http://www.nourishingmeals.com/

Kidco Kitchen Popular Fruit Popsicles

*Makes about a dozen fruit popsicles depending on the size of your popsicle molds

What you need:

  • ¼ to ½ of a fresh watermelon
    •  (If you don’t have access to a blender, you can use a delicious fruit juice as well. I love substituting pineapple juice instead of the fruit puree.)
  • ½ cup fresh blueberries
  • ½ cup fresh strawberries
  • 1 kiwi, peeled and sliced

What to do:

1) Cut up your fresh watermelon into chunks and puree in a blender until smooth.

2) Cut up fresh fruit. You can pick and choose different fruits you’d prefer to use throughout the summer. I think blueberries, strawberries and kiwis add some great colour to your popsicle!

3) Set out about 1 dozen popsicle molds (amount needed will vary depending on size of molds). Fill each one with the chopped fresh fruit. Pour in the watermelon puree until each mold is full right to the top.

4) Place a popsicle stick into each mold and put the popsicles into your freezer for 6 to 8 hours.

5) When ready to serve, you can run the popsicle under warm water to help remove them from their molds. Enjoy!
