We’re Going on a Picnic…

I love the idea of taking day trips with the children. When my children were younger we would take walks to the local park, go on day trips to the zoo or explore southern Ontario. These outings would be lots of fun and would keep our family busy for hours! Packing picnic lunches and snacks can sometimes be overwhelming. The key to success is to be organized. Why not try some of these great picnic lunch ideas below? Not only are they delicious and nutritious but they will help keep the day affordable. Make sure to fill a thermos with some ice cold lemonade. You can even bring a checkered blanket and a basket if you want!

 

Kidco Kitchen Picnic Lunch and Snack Ideas

-Children love whole-wheat chicken Caesar wraps, sliced carrots with hummus, and pear slices. Pack a delicious banana muffin for dessert.

 

-Pack some mini whole-wheat pitas with albacore tuna and black beans, celery sticks with no-nut butter, and diced cantaloupe. Top it off with yummy cheeses and crackers.

 

-Enjoy grilled sliced flank steak on a baguette, cucumber coins with a cheesy spinach dip and a banana. For dessert, pack some strawberry yogurt.

 

-Start with teriyaki chicken drumsticks with mini whole-wheat bagels and finish it off with red and yellow peppers with yogurt dill dip, diced watermelon and homemade oatmeal cookies.

 

-Try a three-bean salad with grilled veggies and rice cakes. End your meal off with peaches and a blueberry lemon loaf.

 

We serve a delicious Picnic Potato Salad on the current Kidco Kitchen menu. It’s very easy and the children love it. Prepare it for your next outing!

 

Kidco Kitchen Picnic Potato Salad

*Makes 4-6 Servings

 

What you need:

2 ½ cup new potatoes

2 tbsp. light mayonnaise

1 tbsp. light sour cream

1 tsp. of apple cider vinegar

¾ tsp. salt

 

What to do:

  1. Wash hands.
  2. Place potatoes in salted cold water and bring to a boil.
  3. Cover pot and reduce heat to a gentle simmer until potato is tender, about 15-25 minutes.
  4. Meanwhile, in a large bowl, combine mayonnaise, sour cream and apple cider vinegar and salt.
  5. Let the potatoes cool to room temperature. Add mayonnaise mixture to cooled potatoes, mix gently.
  6. Serve, or cover and refrigerate.

*If you want, you can add chives or dill for added flavour.
