Super Grain Quinoa

The Holiday Season is upon us Kids & Company. With the New Year just a month away, I have been looking back on all of the interesting health food trends that have come about. Quinoa has become a very popular grain over the past couple of years and seems to be popping up on menus all over, including the Kidco Kitchen’s! 2013 was named the “International Year of the Quinoa” by the The Food and Agricultural Organization of the United Nations (FAO). Quinoa is the only grain that contains all of the essential amino acids which makes it a complete protein and it’s gluten-free! Healthy, nutritious and delicious, my favourite!

You can use it as the side dish for most dinners. You can get it in different colours too if your children like variety. I personally love using white and red quinoa in my dishes. Why not try using it instead of pasta or rice in one of your upcoming dinners?

The Kidco Kitchen serves some delicious grains on our current menu. On the second week of the four week rotation we serve our Cheerful Cod Fillet with a side of Organic Quinoa. I have attached the recipe below so you can add it to your meals at home!

Kidco Kitchen Organic Quinoa Salad

 

Serves 6 Family Members ½ Cup each

 

2 cups Organic Quinoa

4 cups Water or Veggie Stock

1 cup Corn Kernels

1 cup Green Peas

½ teaspoon Salt

 

  1. Wash hands.
  2. Rinse the quinoa in a pot and soak for 10 minutes.
  3. Bring water or veggie to a rapid boil.  Add drained quinoa and salt. Reduce heat at a simmer.
  4. Steam peas and corn separately.
  5. Cook quinoa for 15 minutes until tender fold in peas and corn.
  6. Serve ½ cup per person and enjoy!
