How to Survive the Back to School Frenzy

School season is upon us, which means drop-offs and pick-ups from school, soccer practice, violin and ballet in addition to your already busy schedule. The last thing you want to worry about is cooking, but alas, you can’t order in every night. To help you out with this frenzy, we’ve compiled some fast and furiously good dinner tips that will take the least amount of time and effort with results that taste like it took you hours to prepare.

Our first suggestion to speeding up the dinner processes is being prepared.  Make sure you have all the ingredients you need for your upcoming meals at the beginning of the week.  This will eliminate the need for mid-week grocery shops which eat-up your free time in the evenings.  Another way to be prepare is by doing meal-prep at the beginning of the week.  Try pre chopping all your veggies for salads and stir-frys and sealing them in separate containers so they are ready to go when you are!

A quick and easy vegetarian dinner to try during this busy back-to-school time is our Kidco Kitchen Chana Masala.  It is an Indian dish using chick peas with a bit of a kick from garam masala and cooled down with coconut milk.  When cooking it at home try adding cream to make it super rich and topping with cilantro for an extra flavour boost!

Kidco Kitchen Chana Masala 

*Makes 6 portions

 

What you need:

-       3 cups chickpeas

-       ½ cup onions, diced

-       1 tbsp garlic, minced

-       1 cup tomatoes, diced

-       1 tsp turmeric, ground

-       1 tsp garam masala

-       1 tsp ginger, crushed

-       ½ cup coconut milk

What to do:

  1. Make sure you wash your hands before you begin.
  2. In a large pot mix onion, garlic, tomatoes, spices, chickpeas and coconut milk.
  3. Bring to a boil and reduce to medium/low heat until sauce has thickened.
  4. Serve with brown rice.
