Lemon Poppy Seed Loaf

Spring is my favourite season of the year bringing sunshine, t-shirt weather and the sweet smells of new beginnings.  It is so exciting to go grocery shopping with all the new and delicious produce available in the stores and local farmers markets.  We have just launched the new Spring Menu from the Kidco Kitchen and I cannot wait for your little ones to taste our new Lemon Poppy Seed Loaf.

The feature ingredients in this sweet and sour creation are the yummy taste of lemons and the rich nutty flavour of poppy seeds.  Lemons are a great source of Vitamin C and are vital to the function of a strong immune system. If you want to have an additional lemony flavour to your loaf whisk together icing sugar and lemon juice in a bowl until smooth.  Pour the delicious glaze over the warm loaf and let the glaze set for about fifteen minutes…..sheer perfection. Poppy seeds are an oilseed derived from the poppy plant that are small in size, slate-blue in colour, having crisp texture and nut-like flavour. They are customary in flavoured bread, cakes, rolls and cookies often sprinkled on top of dishes or used as a garnish.  Remember that poppy seeds will spoil if stored for a long period of time in your cupboard so stick them in your freezer and they will keep fresh for a lot longer.

Kidco Kitchen Lemon Poppy Seed Loaf
*SERVES: 16

What You Need:

  • 1 ½ Cup Whole Wheat Flour
  • ¼ Cup Milk
  • ½ Cup Butter
  • ¼ Tsp Vanilla Extract
  • 2 Eggs
  • 1 Tsp Baking Powder
  • 1 Cup Sugar
  • ¼ tsp Salt
  • 3 Tbsp. Poppy Seeds
  • ¼ Cup Lemon Juice

 

What to Do:

  1. Make sure to wash your hands before you begin.
  2. Preheat oven to 325F.
  3. In a large bowl, beat butter with sugar until light and fluffy; beat in eggs, 1 at a time, beating well after each addition.  Add vanilla.
  4. In separate bowl, whisk together flour, poppy seeds, baking powder and salt; stir into butter mixture alternately with milk, making 3 additions of flour mixture and 2 of milk.  Stir in lemon juice.
  5. Pour mixture into a parchment-lined baking tray.
  6. Bake in centre of oven 325F (160C) for 45 - 1 hour or until a toothpick inserted into centre of the loaf comes out clean. Cool pans for 10 minutes.Bottom of Form
