Kidco Kitchen Hearty Party Kale and Red Lentil Stew

According to the Huffington Post, last year Kale was known to be even “cooler than cucumbers!” On the newest version of the Kidco Kitchen menu set to launch shortly, I made sure to include a delicious recipe with this popular super-food. I’m sure it will be a hit with our children!

Kale is a dark leafy green vegetable packed with healthy nutrients. It is a great source of vitamin A and C, calcium, fibre and antioxidants. This vegetable strengthens your immunity, improves eyesight and can contribute to your daily intake of calcium, helping to build strong healthy bones. It’s no wonder this leafy vegetable became so popular in recent years.

I’m going to let you in on a secret… the new recipe for the Hearty Party Kale and Red Lentil Stew that will appear on the new menu. Try it out at home with your family. It’s both delicious AND nutritious! Let me know what you think @KidcoKitchen.

 

Kidco Kitchen Hearty Party Kale and Red Lentil Stew

What you need:

*Makes 6 servings

-   2 tsp. Vegetable Oil

-   2 tsp. of minced Garlic

-   2 Cups of Water

-   1/3 cup of diced Squash

-   1/3 cup of diced Onions

-   1/3 cup of diced Carrots

-   1/3 cup diced Celery

-   ½ cup of Tomato Sauce

-   ½ cup of diced Tomatoes

-   1 Bay Leaf

-   1 ½ cup of a Vegetable Base

-   ½ cup of chopped Kale

-   ¾ cup of Red Lentils

What to do:

1)   Wash hands before beginning preparation.

2)   Heat oil in a large pot, add onions and sauté. Add celery, squash and carrots. Add water, diced tomato, tomato sauce, spices, vegetable stock and bay leaf. Bring to a boil.

3)   Add the lentils and let beans simmer for 30 minutes. Season to taste with sea salt and pepper.

4)   Serve ½ cup per person.

5)   Enjoy!
